Meatless Meal: Vegetarian Somen Noodle Bowl

Vegetarian, hearty, and so full of FLAVOR, that is what this meal is. This meal may also be our new family favorite. I love that it has vegetables. My children love being able to slurp the noodles. It is packed with vegetables and if you have meat eaters it is easily customizable. And with us being a family of 6 (sometimes 7 when my mom comes to help out) having a meal that everyone can make their own is super important. Let’s get right into it! Select the vegetables you would like in your bowl. I like to have them on the side, so no need to worry if everyone likes everything. We chose broccoli, onions, yellow and orange peppers, red cabbage, cauliflower, asparagus, and shredded carrots.

Slice the veggies up and saute them. For the asparagus and broccoli I added sea salt and freshly minced garlic and ginger. Which makes it hard not to snack on while you sauteing the rest of the veggies.

Now it’s time to make the broth. Add a tablespoon of olive oil to a large pot and turn the heat on medium. Add in chopped onions, minced garlic and minced ginger and cook for about 3 to 4 minutes.

Add in the vegetable stock and 1/4 cup of soy sauce. Bring to a boil and let simmer for about 25 minutes. If you have longer than simmering up to an hour brings the flavors together even more.

Prepare the somen noodles per the package instructions.

Prepare the individual soup bowls with the broth and noodles. Let everyone add the veggies as they wish . If you have meat eaters feel free to make shrimp, chicken, or beef to add as well. I added shrimp for our meat eaters.

INGREDIENTS

Vegetables of choice; we used broccoli, onions, yellow and orange peppers, red cabbage, cauliflower, asparagus, and shredded carrots

1 medium sized onion, chopped

7 cloves of garlic (2 for the broccoli and asparagus and the other 5 for the broth)

1 3 inch section of gingerroot (a little more for the broccoli and asparagus)

2 32oz boxes of vegetable stock

1/4 cup soy sauce

1 package of somen noodles- prepared as package instructs.

INSTRUCTIONS

Slice up vegetables and saute them. Add freshly minced garlic and ginger to them if you desire.

Add olive oil to large pot and add chopped onion, minced garlic and minced ginger. Cook for 3 or 4 minutes.

Add vegetable stock and bring to a boil and then turn heat down to medium low and simmer for 25 minutes.

Prepare somen noodles per package instructions.

Add prepared noodles to broth. Add veggies as desired to individual bowls.
